- 1 (16) ounce jar creamy or crunchy almond butter
- 1 cup agave nectar (a natural sweetener)
- 2 eggs
- ½ teaspoon sea salt
- 1 teaspoon baking soda
- 1 cup dark chocolate chips 73% cacao
In a large bowl, with a hand blender, mix almond butter until creamy
- Mix in agave and eggs
- Add salt and baking soda
- Mix well with hand blender until all ingredients are thoroughly combined
- Mix half of the chocolate into the batter
- Pour batter into a well greased 9 x 13 inch baking dish
- Scatter the other half of the chocolate on top of the batter
- Bake at 325° for 35 minutes
- Serve

Spanish Almond Chicken
Rich with robust flavor and aroma, this Spanish dish is nothing short of satisfying. The almond butter lends a delectable thickness to the sauce while the saffron, sherry, lemon and spices infuse the chicken and mushrooms with a warm and wonderful medley of tastes.
- 1/4 cup olive oil
- 1 small onion, halved, thinly sliced
- 1 carrot, finely diced
- 2 cloves garlic, thinly sliced
- 1 (8-ounce) package sliced mushrooms
- Salt and freshly ground black pepper to taste
- 1-1/4 pound boneless skinless chicken breasts, cut into bite-sized pieces
- Pinch of saffron (rubbed finely before adding)
- 1/2 cup dry sherry
- Juice and zest of a small lemon
- 1/2 cup water
- Pinch of ground cloves
- Pinch of ground ginger
- 1/2 teaspoon dried thyme
- Generous 1/2 cup smooth almond butter
- 1 (9-ounce) package baby spinach leaves or about 4 cups
- Toasted sliced almonds
- Finely chopped fresh parsley
Directions:
1. Heat olive oil in a Dutch oven or large saucepan over medium-high heat. Add onion, carrot, garlic and mushrooms and cook, stirring often, for 3 minutes. Season with salt and pepper and continue to cook, stirring for 2 more minutes.2. Add chicken and cook, stirring, until chicken is just cooked through. Meanwhile, dissolve saffron in sherry. Add sherry, lemon juice and zest, and water to chicken, stirring to combine. Bring to a simmer.
3. Stir in cloves, ginger, thyme and almond butter. Bring to a simmer and let cook for 5 minutes. Add spinach and cook, stirring, until spinach is wilted. Reduce heat to medium-low and let simmer for 10 minutes to combine flavors. Serve hot, garnished with toasted sliced almonds and parsley.
Serves 4Almond Butter Brownies
- 1/2 cup Almond butter
- 1 cup Sugar
- 2 Eggs
- 1 teaspoon Almond extract
- 1/2 cup Flour
- 1/4 cup Cocoa
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1/2 cup Grated coconut
Directions:Preheat the oven to 350. Combine the almond butter and sugar. Add the eggs and almond extract: mix well. In another bowl, combine the flour, cocoa, baking powder, and salt. Add the dry ingredients to the wet, and mix well.
Stir in the coconut. Pour into a greased 9-inch square baking pan. Bake for 35 minutes.

Serves/makes 10Apple Almond Butter Muffins
- 1 cup High-Fiber gluten Free flour blend (see Living Without magazine)
- 1 cup ground golden flax seeds
- 1 teaspoon xanthan gum
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 apples
- 1/2 honey
- 1/2 cup almond butter
- 4 eggs
- 1/3 vegetable oil
- 1 tablespoon frozen apple juice
- 1 teaspoon vanilla
- 1 tablespoon water
Preheat over to 400 degrees. Line the muffin tins with paper cups and coat with vegetable oil spray.
In a medium bowl, whisk together the flour mix, xanthan gum, baking powder, baking soda, and salt. Set aside.
In a mixing bowl, using an electric mixer, beat the apple, honey, almond butter, eggs, oil, sugar, fruit juice, and vanilla until fairly smooth. Beat in the flour mixture with a spoon, then divide the batter into the prepared muffin cups. Bake 20 minutes or until a tester inserted in the center comes out clean.- 20 minutes to make/Serves 24
Maple Almond Butter Cookies- 1/2 cup natural almond butter
- 1/2 cup maple syrup
- 3 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 cup whole wheat pastry flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped almonds
Preheat the oven to 350*F. In a large bowl, combine natural almond butter, maple syrup, oil and vanilla extract until well blended. In a separate bowl, mix together whole wheat pastry flour, baking soda and salt. Add dry ingredients to wet ingredients, along with chopped almonds, and stir until just combined. Let sit for five minutes. Roll heaping tablespoons of dough into balls, flatten to about 1/3 of an inch and place onto cookie sheet.
Bake for 8-10 minutes. Makes 18 cookies.
